As always I have what I hope will be a money saving tip for you and your family. The price of meet is extremely expansive in today's economy. So I am always on a look out to save on meet. One way that I do this is by buying in bulk, and likewise I barely ever buy red meet, which is healthier for us as well, so I tend to rely heavily on Turkey for our protein needs. This will change in a month or so, when we receive our 1/8 if of a lean grass feed cow from Mr. T's brother, but we will share that story on another Frugal Friday.
Today's tip though comes from this weeks menu making experience. Last week we had a small dinner party on Friday night, because I had a Turkey in the freezer that I wanted to use up. You might say who has turkey's just sitting in their freezer just taking up space, well I do! I like to purchase ham and turkey, after the big holiday's when I can get them at super super low prices i.e. pennies per pound, I think I purchased this one at Target for 50 cents per pound. Think about a pound of meet for 50 cents, when you put that into perspective compared to usually paying on average $3 or more for a pound of meet this is GREAT! I also like to do this with ham! I again can get lots and meals out of one ham.
Out of this Turkey I had the basics for 1 dinner party, 3 more dinners, plus lots of lunch meet! Which was fantastic. I tried a few different things this time, some worked better than others.
I made Turkey Carcass Soup, which I love the premise of this, letting nothing go to waste. I did not like how it turned out though, I used rice and I did not cook the rice before hand so it became more of a turkey and rice hot-dish, and I still have some that I need to use up. Needless to say, next time I will be trying a new soup recipe.
Last night though we had Easy Cheesy Turkey Enchiladas, they were wonderful. I highly suggest trying the following recipe with your turkey leftovers next time.
You Will Need:
1lb Turkey, cubed, I simply, cut and shredded mine
1 cup light sour cream
1 cup light ranch dressing
10 flour tortillas
8 ounces shredded cheese
1 pint salsa
2 ripe tomatoes
1 head of lettuce shredded
Nonstick vegetable spray
Directions:
Pre-heat the oven to 375 degrees
Coat a 9x13 inch baking pan with the cooking spray
In a small bowl combine the sour cream and the ranch dressing.
Spread a tablespoon of the above mixture on each tortilla.
Add the turkey to the remaining sour cream and ranch mixture.
Top each tortilla with a 1/3 cup of the turkey, 2 tablespoon cheese, 2 tablespoon salsa.
Roll each totilla and place seam side down in baking pan.
Bake for 25-30 min.
To serve top with lettuce, tomatoes, cheese, and salsa.
